Controguerra Pecorino DOC
Pecorino is an indigenous grape variety from the hilly areas between Marche, Abruzzo, and Lazio, long forgotten and now rediscovered thanks to careful and territory-respectful viticulture. This wine is born from a meticulous selection of grapes and from cellar practices focused on quality and sustainability, in order to preserve the most authentic expression of the variety and its place of origin.
In appearance, it shows an intense straw yellow color with greenish reflections. The aromatic profile is fresh and refined, with notes of white-fleshed fruit, white flowers, and delicate mineral hints. On the palate it is well balanced, savory, and pleasantly soft, with returns of acacia and reinette apple, enhancing its drinkability and versatility at the table.

Yield: 70 q/ha
Vinification:
The grapes are destemmed and gently pressed; the must is then fermented in stainless steel tanks at controlled temperature (10–11 °C). This is followed by ageing on fine lees for about 3 months, in order to increase complexity and structure.
Food pairings and serving:
Ideal with raw fish, seafood appetizers, light first courses, and roasted fish dishes.
Recommended serving temperature: 6–8 °C.
